What makes Buono Beef at Homes quality so good?
All of our beef comes from the Midwest, is USDA inspected, and hand-picked
and trimmed by the expert butchers of M. Buono Beef Co.
Our Buono Beef meats are top quality. We use Prime and Choice meats. This means that all cuts are from Prime or Choice steer which produces better flavor and texture.
Beef is graded for quality by U.S. Department of Agriculture (USDA)
graders according to standards established by the USDA. Grades are
based on the amount of marbling (flecks in fat within the lean) and
the age of the animal. These quality grades are an indication of palatability
characteristics such as tenderness, juiciness, and flavor.
While there are eight quality grades for beef, the top three, Prime,
Choice and Select, are the ones available to most customers.
Prime has the most marbling. It is produced in limited quantities
and usually sold to fine restaurants and specialty meat markets. Choice
falls between Prime and Select. Of these three, Select has the least
amount of marbling, making it leaner than, but often not as tender,
juicy and flavorful as, the other two top grades. Most supermarkets
today only offer a selection of Choice and Select cuts.
Is the meat delivered fresh or frozen?
Our meats are always delivered to you fresh, and have never been frozen.
How is the meat cut and packaged?
Each item in your order is selected and trimmed by our own expert
butchers. The cut is then individually vacuumed-sealed for freshness
and convenience. For packages that are to be shipped over night the
provisions will then be packed in a Styrofoam cooler, surrounded by
cold gel packs and sent in a corrugated shipping carton.
What is this "vacuum sealed" packaging?
Each piece of meat (excluding hams and turkeys) is vacuum-sealed in
its own sturdy plastic pouch. The individual vacuum seal process is
not only a convenient way to manage portion control, but also protects
the products that you wish to freeze from freezer burn and allows
for simple thawing.
What overnight delivery services are available?
If outside of our local delivery area overnight delivery service is
available. We offer Standard Express Delivery (2 days), Overnight
Delivery (for an additional $10 surcharge over our Express Delivery),
and Saturday Delivery (for an additional charge of $12.50 over the
normal Overnight Delivery charges). Please see our order form for
Standard Express Delivery prices.
How can I check on the status of my order after it has been placed?
For local deliveries you may call us directly to check on your order
status. When your order is shipped overnight you will receive an advance
ship notice via email that will provide you with an order number and
FedEx or UPS tracking number.
What is the shelf life of the meat in the refrigerator?
Meat with the bone will last 5 days. Meat without a bone will last
8 days.
Can I also freeze my order once I receive it?
Buono Beef meats are delivered fresh. Once received you have the option
of keeping some items in the refrigerator that are to be consumed
in the near future or freezing items for use at a later time. For
best taste, meats should not be frozen for longer than 6 months, though
it does not mean that they are spoiled after that time.
How do you recommend defrosting meats that I opted to freeze?
Our clients enjoy the flexibility to keep a reserve of meat out in
the refrigerator for the nights dinner and freeze the rest.
Our individual vacuum packaging of each cut of meat allows for convenient
defrosting. To defrost, simply remove the desired amount of meat from
the freezer in the morning and place in the refrigerator and by dinner
time your meat is ready to be cooked.
